You probably already know that I am a soup addict! Perfect comfort food for cold and rainy days, which we have quite a few here in Holland!
I just got home from a lovely vacation at Lanzarote, together with hy husband Sander and our 7-months old daughter Janne. From the sunny Island back to the rainy and cold Netherlands! What other reason do I need to make a big pan of soup!
Today I serve a homemade tomatosoup, super easy to make, loaded with vegetables and easy to adjust to your own liking!
Here’s What you need;
- 500 grams of tomatos
- 2 onions
- 1/2 – 1 carrot
- 1/2 – 1 spanish red pepper
- 2 large gloves of garlic
- 2 vegetable stock cubes
- Small can of tomato puree
Heat a little oil in a large pot, add the garlic, pepper and onions and broil. Chop the carrot and add. After a few minutes add the chopped tomatos and tomato puree. Let simmer for 2 minutes and then add 1.2 liter of water and the stock cubes. Bring to the boil and boil for about 10-15 minutes. Use a handmixer or blender to blend into a smooth soup.
You can adjust the soup the way you like; left over veggies? Add them together with the carrot! You can add some pasta or meatballs to make a more savoury soup. And why not try a few fresh herbs such as basil or koriander.
